South Tyrolean dumplings

Preparation:Cut the bread into cubes. Finely chop the leek, chives and parsley. Combine the flour with the bread and add the milk. Take the shallots, cut them into cubes and brown them in the oil together with the leek. Combine these to the dough and add the chives and parsley. Combine the eggs and form a homogeneous mixture. Let the mass rest for approx. 15 minutes. Make some dumplings and cook them in salted water.

    Ingredients for 4 people (2 dumplings per person):

  • 500g of stale bread
  • 100g of diced speck
  • 1 smoked sausage cut into cubes
  • 1 leek
  • 0,5L of milk
  • 40g of flour
  • 100ml of milk
  • 1 tablespoon of finely chopped parsley
  • 1 Tablespoon finely chopped chives
  • Salt, pepper and olive oil to taste

Preparation time: 20 minutes
