Mix the egg yolks with the sugar in a bowl until you get a soft cream.
Combine the flour, grated lemon zest, vanilla, salt, softened butter and cream made with egg yolks and sugar on a pastry board.
Mix the dough without working it too much, then form a ball that you will put in the refrigerator for at least an hour.
Now put the cooled dough in a pastry bag (sac a poche) and using a striped spout form small rings on the plate lined with parchment paper which you will subsequently bake at 200 ° C for about 10 minutes, they must have a nice golden color.


  • 300 g of finely ground corn flour (cartoon)
  • 200 gr of soft wheat flour 00
  • 1 teaspoon of vanilla extract
  • 280 g butter
  • 250 grams of sugar
  • 4 yolks
  • a grated lemon zest
  • a pinch of salt
